My Mom's Pesto

Once you tried homemade pesto, it's very hard to go back to store bought versions. My siblings and I were spoiled growing up as my mom never bought jarred pesto and always made her own. Thankfully, my mom's recipe is super easy and jammed pack with flavor!

Yield 2 jam jars
Time 30 minutes
Whats not to love about fresh basic, garlic, pine nuts and cheese? (lots of cheese)
Ingredients
90g basil
4 garlic cloves
80g pine nuts
250g finely grated Parmesan (I do this in the food processor with a Parmesan blade)
(or 1/2 Parmesan and 1/2 Pecorino)
around 350ml good quality extra virgin olive oil
Pepper and salt to taste
Method
Step 1
Put the basil, garlic, pine nuts and Parmesan in a food processor and mix for around a minute.
Step 2
Once the mixture is combined, add the olive oil slowly while the food processor is on. You're looking for the mixture to come together in a spreadable paste with a bright green color.
Step 3
Add pepper (I like lots!) and salt to taste.
Pesto is great just on its own or as a sauce for pasta. Add on top of homemade pizzas, tarts, quiche or just spread it on crackers with cheese. The possibilities are endless!
