Plum & Almond Tart

Yield 1 tart

Time 1 1/2 hours


Ingredients

  • 4 plums

  • 150 g of butter at room temperature

  • 180 g of sugar

  • 3 eggs

  • zest of one lemon, plus 1 tbs of lemon juice

  • 2 tsp of vanilla extract

  • 90 g of all-purpose flour

  • 110 g of almond flour

  • 1 tsp of baking powder

  • pinch of salt


Method

Step 1

Heat the oven to 180 C. Grease a 22cm tart pan with parchment paper of butter and flour. Cut the plums into half moons and set aside.

Step 2

Mix the butter, sugar, lemon zest and juice, and vanilla in a bowl with a paddle attachment until light and fluffy (4-5 minutes).


Step 2

Add eggs one a time until incorporated. Its okay if the mix splits, it will come together when the dry ingredients are added.


Step 3

Add the dry ingredients (flour, almond flour, salt and baking powder) to the wet ingredients until just incorporated.


Step 4

Put the mixture into the tart pan and layer the plum pieces in two circles around the tart.


Step 5

Bake the tart for 45 minutes until the batter is raised and golden, or until a toothpick comes out clean. Let the cake cool before taking it out of the tart pan and enjoy!
